Curry vegetable soup of corn, peppers, green beans, tomatoes, garbanzo in a bowl of navy blue etched in white florals and foliage.
Curry Veggie Soup Recipe
from Allison’s friend2 cans garbanzo beans
2 cans diced tomatoes
32 oz vegetable broth
One red onion, diced
2 tbsp Garlic
2 tbsp Ginger
2 tbsp coconut oil
1 package super food veggies or whatever vegetables you like
1 can coconut cream, extra creamy
3 tbsp+ curry powder
Salt
PepperAdd oil to pan.
Add diced veggies, garlic, ginger, and onion. Salt veggies. Cook until onions are translucent and veggies are softened.
Add tomatoes and curry. Cook 5 minutes.
Add broth and coconut cream.
Heat to simmer.
Add garbanzos.Cook for 30 to 40 minutes.
